Dough
- 2 cups whole wheat flour
- 1 cup water, or 1/2 cup water and 1/2 cup kefir
- salt qb
Filling
- 5 potatoes
- 1 onion
- pepper qb
- oil qb
Side (1)
- 1 onion
- paprika
- 1 garlic

- Brocoli or peas
1. Peel and cut the onions in small pieces.
2. In a small fridge, put some oil and fry one onion for some minutes to improve taste. Add pepper to taste.
3. Peel the potatoes and chop them in small cubes. Boil them in some water and salt before use.
4. Put the flour, water and salt in a large bowl and knead until it is ready to mold. Let rest for about 30 min.
5. Spread the dough on a clean floured surface and cut in circles using a small bowl or glass.
6. Put a small amount of potato and onion in each circle and fold the dough to close. Press over the union for sealing and forming beautiful Vareniki.
7. Cook about 12 Vareniki each time in a large pan with plenty of water. Take them out after about 5 minutes. Roll them in organic olive oil if desired to prevent them from sticking together and improving taste. They are ready to serve.
Side dishes
8. Cut one onion and one garlic into a fridge, with some olive oil. Add paprika as desired and let cook until the onion is tender. It's ready to serve.
9. Cook some broccoli and/or peas if desired. Seasoned with good quality olive oil, they add color and nutrition to the dish.
10. Serve the Vareniki sided with the sauteed onion and the broccoli, for a colourful and tasty vegan dish.
